    ever since i can remember, october always reminded me of pumpkins. mom always cut them open to get out the seeds. salted and roasted them. didn't really take the pulp off of them. you can't believe how good the pulp tastes roasted. M M M M M M M

    Besides the seeds and pies we all love, you can also boil the flesh and make pumpkin - mashed potatoes.(or squash in this case)

    Big mistake to rinse the seeds before baking! Leave the orange residue from the pulp on the seeds, other wise you just wash off a lot of the flavor. Save all the seeds in a bowl, then add 1 TB of mild vegetable oil for each cup of seeds and 1-2 tsp of salt (popcorn salt works great)! Bake on a cookie sheet at 250 until seeds dry. YUMMY

    I've read pumpkin seeds are also great source of Omega 3 and Omega 6 fatty acids. Trader Joe's sells a cereal that has pumpkin seeds, granola and flax - it is outrageous! I think the brand is Nature's Path - look for it! I was a pumpkin junkie before I discovered pepitas - anything pumpkin flavored I love!

    When i was a kid, my mother used bacon grease in the pumpkin seeds. Lay out the seeds out into a cookie sheet and add your bacon grease from that morning or whenever,put it in the oven at (350) until golden and crisp. stir at times, when done add salt to taste... Enjoy
