I have a fabulous recipe for a sort of shrimp scampi/alfredo. I use skim milk, sometimes I use real butter and sometimes "I can't believe its not butter" obviously the latter being healthier. I am guilty of the boneless, skinless chicken and steamed broccoli trap. I used to make some form of chicken entree 2-3 times a week and make a fabu salad the other nights for dinner. Then I discovered orange roughy and salmon. Still looking for creativity.

dmhco, good for you, orange roughy is on good fish when properly prepared, one of my favorite ways, just tear off a large sheet of foil, lay out the fish rub in some butter substitute sprinle a helping of lemon juice, wrap it tight an place it in the oven. don't have the temperature turned up too high, when it is prepared, have your favorite tartar sauce, yes there is a difference from brand to brand. or if you are in the mood just skip the tartar sauce. either way that is a great fish.

for salads one I like to make when having company. looks good as well as tastes great, lay lettuce on the plate place a slice of pinapple on top of it, a scoop of cottage cheese in the middle, place some peach slices on the side of of the cheese, top with a cherry. be sure to have plenty of paper towels handy so you can use them as blotters, this leaves the fruit dry so the colors don't run and spoil the appearance. I said plate shoud have said salad plate.

stormi, #24, are you sure some of that wine actually makes it to the food. LMAO. would almost bet the wine flavor surfaces in the cook, not the food.

Broiled, skinless chicken breast - a "terrific food" according to Joy Bauer. Why do nutritionists in the media never mention important research in books such as The China Study (by T. Colin Campbell published in 2005), in which the diseases associated with eating poultry and other meats are very clearly explained?

I've had trouble with dairy products since I was about 16. I am now 20 and for about the last 3 years I have been drinking and eating many soy products to compensate for my lactose intolerance. However, recently I've heard soy milk and many soy products are not good for women, and may even cause bad skin. Should I stick to soy or take lactaid and eat low-fat dairy? Thank you!

Hello, Joy! I've never been on a log before but was won over by your sincere writings. I have become obese during the last ten years and am on effexor. During the decades before now, I was athletic and slim - and depressive. I'm scheduled for bilateral knee replacements late in August and wonder if you can advise me as to how I should eat to lose weight prior to the surgery?

I am a young female athlete and I want to keep my lean muscle up, but my fat down. Of course I eat carbs, especially after a strenuous game of volleyball;the question is how many carbs can I eat after the exercise to not gain weight? AND what about my protein intake , which I might add is alot?
