YUCK! I love oatmeal cookies but not with so much fruit and sugar that I'd gag on it. If I were making this recipe, I'd remove all of the dried fruit (raisins, apples, or cranberries) from this recipe when an entire cup of coconut is being added. I'd put in a cup of walnuts instead of the dried fruit. There's still a cup of sweetener in there between the maple syrup (which I wouldn't use) and a 1/2 cup of turbinado sugar (wouldn't use either). When there's also a 1/2 cup of mango puree or apple sauce being added in as a sweetener, you can safely cut back on the sweeteners you're using. At most, I'd add in a 1/2 cup of brown sugar and completely remove the cinnamon and allspice from the recipe. Have nothing against spice but I wouldn't want it to overtake the coconut and walnut flavor. I guess this recipe needs it though with the overload of fruit and sweeteners that's recommended in it. Good grief! No wonder there's an epidemic of diabetes than ever before. People would be better off making old fashioned apple crisp instead of eating the "oatmeal power cookie."
