    I'm a professional chef... cook beans with carrots, or the herb epazote...most effective. Also, do not add salt or any acid to the beans until they are finished cooking or they will remain hard.

    as far as the protein value, beans are a complete protein only when accompainied by grains (whole wheat bread, rice, etc...)

    Dr. Mao is completely correct in everything he has said, but he should also mention that beans/legumes are an incomplete protein and must be eaten with rice or other grains in order to recieve maximum benefit...

    Thanks for the enlightening facts about beans. But is it not worth mentioning if it has some bad effects to the body, like its uric acid content which causes joint pains?

    How long can I cook my beans untill they start losing nutritional value? Does cooking them for 3 hours destroy the protein, antioxidants inside?

    As a vegetarian I have had, in the past, a hard time making sure I am consuming enough protein (as well as B-12 and certain other vitamins). Black beans and lentils are my favorites. Thank you for the information on reducing flatulence - I never knew you could use spices to do that. Keep up your good work:) ~Jen
