    Every cooking method can destroy nutrients and vitamins; it depends on how long the food is cooked for, the amount of liquids, and the temperature. Microwaving food involves less heat and a shorter cooking time, thus preserving nutrients more effectively than, say, over a stove. Cooking with water is one of the best ways to destroy nutrients so avoid adding water when possible. In short, microwaves are actually better than conventional methods in regard to preserving nutrients. Yahoo! should not employ people who propagate such psuedoscience nonsense.

    Dr. Mao, I don't know where you get your datas, but definitely you don't know your facts. Asparagus, Broccoli, Cabbage, Papaya, Pineapples and Sweet Corn Have the least amount chemicals? You gotta be kidding!! I used to grow them myself. YOU CANNOT GROW THEM PROFITABLY WITHOUT USING CHEMICALS. Let me ask you something, in pineapple for example, Can you make 85% of your plants bear fruit without spraying them with chemicals? Please do your homework and not deceive the readers by your irresponsible writeups.

    Once again, Dr. Mao is full of bullpoop. Microwaves don't use radiation to heat your food. The heat generated by the microwave excites the food molecules to heat from the edges inward. That's why we have food with cold centers. Adding water will not make the food better, either. That's an old wive's tale. In the summer months, most people with a brain use the crock pot or microwave to eat. Otherwise, it's too hot to turn on the oven.

    So, why aren't all fruits and vegetables in America organic? Hmmm, maybe its because the FDA doesn't care. Maybe that's why people in Europe are healthier.

    I'm pretty sure I remember reading an article that said organic is mostly hype and the "benefits" are negligible, never mind the huge premium. I also would argue that microwaves themselves don't make the food unhealthy so much as the food that is normally cooked in them (hot pockets, t.v. dinners, etc.) are the negative.

    That study from the Spanish scientific research council revealed that the broccoli was microwaved in the presence of water. This could give the impression that the nutrients were destroyed but in reality was leached out of the broccoli into the water.

    Dr. Mao needs to revisit basic physics ! Yes microwaves are part of the electromagnetic spectrum - near radio waves - but a very, very specific frequency. The heat generated by microwaves comes from rotational energy of the water molecule. That frequency will not rotate ethanol or any other organic molecule. The only reason the plate might get warm is from the food or if it has any water molecules trapped inside the plate. Things that do not contain water molecules will not heat in a microwave to any appreciable degree. (This is why you should NEVER put a cat in a microwave, unless you want it to boil) !! Furthermore Microwaves ARE NOT particles - according to modern physics they have properties of particles and waves. They are No More Particles than UV rays or infrared used in some ovens. Dr. Mao needs to go back to school - or maybe he slept through those lectures... MD's think they know everything! Whereas they actually know little about the physical sciences. He should peddle his pseudo-science elsewhere. M.S. Chemistry

    What about fruits & vegetables that are made into drinks, such as organic apple/cranberry juices, or vegetable drinks, how much nutrients are retained in them?

    Organic food is a luxury for the rich. We cannot feed the starving people on the planet by trying to scratch food out of the firt with no chemicals or GMO's
