    These all sound very good, except the Watercress with Tofu Dressing. Tofu is basically a raw soybean curd, and has high levels of phytates, or phytic acid. While phytates have been shown to provide some limited degree of reduction of the risk of colon cancer, they also have strong mineral chelating effects, in quantity. In other words, it will strip some minerals out of your body as it digests, including calcium. This is true of any raw, unfermented or unsprouted soy product. They should be avoided, especially by women over 40. In addition, there have been studies showing negative effects on thyroid functions by soy. Fermented soy products, on the other hand, do not suffer these effects, as the phytates have been essentially negated. These include miso, natto, tempeh, etc. In addition, fermented (or sprouted) soy products have a higher bio-availability of protein, unlike their unfermented counterparts. Instead of the tofu, try cultured buttermilk, sour cream, or other bacteria-laden long-chain, saturated fatty acid food to improve the nutrition content and digestibility of this dish. T.G.

    I like a good salad... on the side of a steak and baked potato. Unfortunately, these salads sound like they taste like cr@p. Tofu, seriously?!

    I like the salad recomendation for the beets although I might make slight changes like almonds instead of walnuts and I may or may not steam the beets. I wonder what fennel tastes like in the fennel salad.

    I AM GOING TO START UP A BUSINESS SELLING SALADS TO GO, NAMED McSalads !!! I CAN SEE IT NOW MILLIONS OF SUPER OVER WEIGHT WOMEN WILL LINE UP FOR ALL OF THE HEALTHY ORGANIC FARE AND PASS UP ALL OF THE JUNK FOOD THEY HAVE BEEN EATING ALL OF THEIR LIFE. THE SALAD DRESSINGS WILL BE HOT FUDGE, CARMEL AND 1/2 A CAN OF WHIPPED CREAM. AND A GALLON OF DELICOUS SODA TO WASH IT ALL DOWN... AND THEN WE WILL ALL LIVE TO 200 YEARS OF AGE..... Ha Ha Ha
