    Squash can make an excellent side dish. Cut up chunks of butternut squash and yams. Simmer them in apple juice in a fry pan until tender. Toss in toasted walnuts and you have a delicious side. You may also add dried cranberries to add more color.

    My family loves squash! In fact,I have every variety you mentioned sitting in my kitchen waiting to be made into something yummy and healthy!
