What, no squash? All that beta-carotene packed in all those lovely colors and shapes--pumpkins included?! If those aren't the embodiment of autumn veggies, I don't know what is! They're so good, and so healthy! And you can wash the seeds, then toast them in the oven!
My favorite way: Preheat oven to 350 F. Cut an acorn or delicata in half (scoop out the seeds), mix butter, fresh lemon juice & honey, spread all around the cut edge and the inside. Place in a baking dish with an inch of hot water in it, then bake between 40-50 minutes, depending on size of squash, till soft. Delicious!
