I learned from a famous agricultural biochemist that spinach should never be eaten without cheese or milk. The type of calcium in spinach binds with the calcium in your bones and teeth if no other source of calcium is present in the meal. (You know that feeling of fuzzy teeth!) So, when spinach is pushed as a healthy food without the benefit of cheese or milk, one is actually causing harm - potential osteoperosis - to those who take the advice. Have them take cheese or milk with their spinach!

I'm excited, I have a yard full of dandelions. I am going to give it a shot. I hate beets though, so that one will be hard, but spinach salad is yummy.
