I find this article helpful, and it is clear that nurse Shockney is a very well qualified professional. However, I can't help but wonder: in her picture, she looks to be 40 to 50 pounds overweight, and of an age where such excess weight presents particular dangers to good health. I have seen many persons in the US advocating for better health habits, who are considerably overweight. How credible is a person who does not follow her/his own advice?
The ONLY way to become overweight is to consume excess amounts of sugars and saturated fats. During WWII in Europe, no one was overweight who wasn't collaborating with the nazis, and most cardiovascular ailments all but disappeared. The reason: very little to eat, and certainly no sugar or fat.
